It could have acute respiratory distress. Chameleons will do this if they are nuritionally deficient in certain nutrients, if their food has caused trauma to the throat, or if they have a severe bacteria infection of the lungs.
It is serious and life threatening. You should take your lizard to a reptile specialiat veterinarian in your area.

You had better see a Vet. I've attached an URL http://www.animalcareassociates.com/iguanahealth.htm which contains some ailments and from what you mention, it appears that your Iguana has a dietary deficiency. But that's my opinion. You'd better see a Vet
